Birthday Cake Shots


Last Sunday was Sara's birthday and we made these adorable little birthday cake shots at her shower! They taste good too!

What you need:
1 shot cake vodka
1/2 shot Tres Leches Triple Creams Liqueur
whipped cream
sprinkles
agave necter

What you need to do:
dip rim of shot glass in agave nectar then into sprinkles. mix vodka and liqueur. pour into shot glass and top with whipped cream. Happy Bday...Cheers!!

Chicken Enchilada Dip


I think this is going to be the new hot dip... Lindsay made it the other weekend and people were literally scraping the sides of the dish it was so good. I mean look at the ingrediets... all things fattening = delicious.

What you need:
2 (10 ounce) cans Rotel tomatoes with Chiles, drained
2 (8 ounce) packages cream cheese, at room temperature (Lindsay used low fat)
1 cup mayonnaise (Lindsay used low fat)
1 cup sour cream (Lindsay used low fat)
1 pound shredded cooked chicken breast (she just baked it and shredded it)
4 cups shredded cheddar cheese (Lindsay used mexican blend cheese - DON'T use low fat here, it wont melt as well)
Chips for dipping (we used tortilla)

What you need to do:
Preheat oven to 350°F. Spray 3-quart casserole dish with nonstick cooking spray. In a large bowl and with an electric mixer, blend together cream cheese, mayo and sour cream until smooth. Stir in chicken and cheese and pour into prepared dish. Bake 25 to 35 minutes. Serve with tortilla chips for dunking.

Three Meat Spaghetti Pie


YUMMM! Of course we loved this because of the absurd amount of cheese and meat thats in it. Another Paula.

What you need:
1 pound ground chuck
1 8oz package diced ham
1 cup quartered pepperoni slices
1 cup chopped onion
1 26oz jar pasta sauce
1 14.5 oz can diced tomatoes with basil, garlic, and oregano
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper
3 cups shredded italian 6 cheese blend, divided
1 16oz package rigatoni, cooked and kept warm

What you need to do:
First, start cooking your pasta if you haven't already. Preheat oven to 350 and spray a 13x9 casserole with Pam (I used my bigger casserole dish and it fit better). In a large skillet, cook meats and onion over medium heat until beef is browned and crumbly, drain, and return to skillet. Add pasta sauce, tomatoes, italian seasoning, and crushed red pepper. Add two cups cheese, stirring until cheese melts. In a large bowl combine beef mixture and hot cooked rigatoni. Spoon into prepared baking dish. Bake for 30 minutes. Sprinkle with remaining cheese and bake for 10 more minutes.

Blackened Tilapia Sandwiches


This is a super fast recipe and I am new to fish and really liked it. I got this from Paula again!

What you need:
1.5 pounds tilapia fillets
1 tablespoon blackening seasoning
2 tablespoons butter (I subbed olive oil here)
4-6 toasted and buttered hoagie rolls
Super Duper Sauce (see below)
1 ten oz pakage shredded lettuce
1 thinly sliced tomato

Super Duper Sauce:
1 cup mayo
1 tablespoon minced green onion
2 teaspoons fresh lemon juice
2 teaspoons sweet pickle relish
2 teaspoons hot sauce
1 teaspoon creole seasoning

What you need to do:
Sprinkle tilapia with blackening seasoning. In an XL skillet, melt butter over medium high heat. Add tilapia and cook for 2-3 minutes each side or until fish flakes easily with a fork. Spread cut sides of rolls with super duper sauce. Top with lettuce, tomato, and fish. Cover with top halves of rolls. Serve immediately.

To make Super Duper Sauce: In a small bowl, combine mayo, onion, lemon juice, relish, hot sauce, and creole seasoning. cover and store in fridge up to 3 days.

Mini French Dips


I made these for the shower too and these are also delish! I made minis by cutting the crescents in half, but this recipe I found is for big crescents. We actually had these for dinner one night too and loved them. The recipe calls for homemade Au Jus (link to that recipe provided), which I tried but Tommy and I didn't love it so we just got some from Arbys! Yes they sell just Au Jus.

What you need:
2 packages crescent rolls, 8 count
1 pound deli roast beef, thinly sliced
4 ounces mozzarella (or cheese of choice), cut in 16 equal sized pieces
optional: Horseradish Sauce
optional: Au Jus for dipping

What you need to do:
Unroll crescents onto a large cookie sheet. Spread a small dab of horseradish on each crescent, then place a slice of roast beef and a piece of cheese on each crescent. Roll crescents starting from the wide end and ending at the narrow end. Bake at 375 degrees for 11 to 13 minutes, until crescents are a golden color.
Serve with Au Jus and enjoy!

Mini Chocolate Strawberry Cheesecakes


I made these for a couples shower this weekend and these are a huge hit! Super delicious and really cute. Note: The below recipe is how I made them. Paula's recipe calls for twice the filling that I used. But I preferred the more chocolatey bottom. This makes 24 2 inch cheese cakes.

What you need:
Crust:
2 1/4 cup crushed chcolate wafer cookies (I used oreos with filling scooped out)
1/4 cup sugar
1/2 cup butter, melted
1 egg white, lightly beaten

Filling:
1 8oz block cream cheese, softened
1/2 cup sugar
1 teaspoon strawberry extract
1 large egg
1/4 cup sour cream
1 tablespoon all purpose flour
1/4 teaspoon red food coloring
Garnish: Whipped Cream, strawberry heart cutouts

What you need to do:
Preheat oven to 350. For crust, in a small bowl, combine crushed cookies, sugar, belted butter, and egg white, stirring well. Press mixture into bottom of 24 2 inch foil cheese cake cups*****, or a mini cheesecake pan. Bake for 8 minutes.
For filling, in a large bowl, beat cream cheese, sugar, and strawberry extract at medium speed with a mixer until creamy. Add eggs, one at a time, beating well after each addition. Stir in sour cream, flour, and food coloring. Spoon batter into prepared crusts and bake for 16-18 minutes or until centers are set. Cool completely. Store, covered, in fridge for up to 3 days. Garnish with whipped cream and strawberry heart cutouts

*****I had to get these 2 inch foil cups for another dessert I made, and I could only find them on amazon in bulk! I had to buy 24 boxes of these! Hopefully you'll have better luck finding them. Or maybe have a mini cheesecake pan.
